Poke bowl with salmon and Brander Mayonnaise

Ingredients

For about 4 people

  • 200 g fresh salmon fillet cut into cubes
  • 200 g sushi rice
  • 1 tbsp rice vinegar
  • 1 tsp sugar
  • 1 sliced avocado
  • 1 cucumber cut into thin slices
  • 1 carrot cut into thin strips
  • 2 tbsp soy sauce
  • 1 tsp sesame oil
  • 1 tbsp sesame seeds
  • Edamame beans
  • 1 spring onion, cut into rings
  • Optional: cilantro and or seaweed salad
  • Oliehoorn Brander-Mayonnaise

Here's how to make it

Prepare sushi rice:

  1. Cook the sushi rice according to the instructions on the package.
  2. In a small bowl, mix the rice vinegar and sugar, and stir into the hot rice. Let the rice cool to room temperature.

Marinate salmon:

  1. Mix the cubed salmon with 2 tbsp. soy sauce and 1 tsp. sesame oil. Let the salmon marinate for a few minutes.

Poke bowl assembly:

  1. Divide the cooled sushi rice between two bowls.
  2. Add the marinated salmon, avocado, cucumber, carrot, seaweed salad and edamame beans.
  3. Sprinkle with sesame seeds and spring onion.
  4. Pipe the Brander Mayonnaise in a zigzag pattern over the poke bowl
