Cook the chicken breast in a pan with water and a pinch of salt for 10-15 minutes, until the chicken is cooked. Let the chicken cool and then pull it apart into small strips with 2 forks.
Sauce Making: Mix the seafood mayonnaise, Greek yogurt and lemon juice in a large bowl. Season the sauce with salt and freshly ground pepper.
Add the cooled chicken, diced apple, raisins and chopped red onion to the sauce. Mix everything well so that the chicken and remaining ingredients are evenly coated with the sauce.
Taste the salad and add additional salt, freshly ground pepper or lemon juice if needed. Optionally, add some chopped parsley or chives for extra flavor and color.
Leave the salad in the refrigerator for at least 30 minutes to allow the flavors to soak in. Serve the chicken salad on a sandwich or toast or as a side dish with a meal.
