Mini chicken skewers with chipotle sauce and curry
Ingredients
For 12 skewers
2 chicken breasts
1 teaspoon paprika
1 teaspoon of garlic powder
1 teaspoon curry powder
1 tablespoon of olive oil
Salt and pepper to taste
12 small skewers (soak briefly in water to prevent burning)
Oliehoorn fries sauce and curry sauce
Here's how to make it
Cut the chicken breasts into small cubes of about 2 cm.
In a bowl, mix the olive oil with paprika, garlic powder, curry powder, salt and pepper.
Add the chicken pieces and mix well so that all pieces are covered with the marinade. Let it marinate for at least 30 minutes (longer is allowed for even more flavor).
Thread the chicken cubes onto the soaked skewers (about 2-3 pieces per skewer).
Heat the barbecue or grill pan over medium-high heat.
Grill the mini skewers for about 8-10 minutes, turning them frequently until the chicken is golden brown and cooked.
Serve the skewers warm with Oliehoorn fries sauce and curry sauce. Tip: Delicious with a fresh salad or baguette
